Whaligœ is a natural Scotch whisky distillery in Caithness, on the unforgiving northern coast of Scotland. Our distillery is our attempt to answer a simple questions - what might happen if we made a concerted effort to harness the power of the past with a view to distilling a fully natural, seasonal, even wild whisky? Join us on a journey of rediscovery.

A journey of re-discovery. 

We are the custodians of generations of mistakes, breakthroughs and happy accidents. We intend to make the most of that. Whaligœ is an exercise in re-discovery. We are creating a whisky based on principles laid down by generations before us, an earnest and honest effort to preserve and advance what could so easily be lost.

We start with the land.

Whaligœ is a distillery in the heart of the Flow Country – an internationally significant peatland habitat which is now a candidate for UNESCO status. For generations, these peatlands have been a sustainable source of heat for the communities of the North. Peat was foundational to their survival. Today, Whaligœ celebrates this inheritance with a simple vision for a collection of highly peat-forward Scotch whiskies using peat from just around the corner, using the same sustainable methods our forebears used.

A Natural Scotch Whisky

Through our journey of re-discovery, we intend to revive a once lost but ancient variant of bere barley. Bere was once the standard strain here in Caithness, but is since only found in quiet pockets of Scotland and is a closely guarded crop. Our farming partners in Thrumster are busy growing our first organic crop just for Whaligœ, creating a single-farm expression. With local peat, ancient barley and Caithness water, every ingredient in Whaligœ will be sustainably sourced from a ten mile radius.

Seasonal Expressions

Once we have taken our organic bere barley, it’s time to match that with the Caithness peat. We will be undertaking 100% of our maltings ourselves, at a limited scale. It’ll make for a smaller batch of whisky, but if we’re serious about our journey of re-discovery then our priorities lie outside making a quick pound. Just as our ancestors would have done, all of Whaligœ’s maltings will be carried out in the open air. If you know anything about the far North of Scotland, you’ll know that we are liable to get four seasons in one day. Nothing important was ever easy, but we feel our mission to create a truly natural and wild whisky is one worth pursuing.
